Good chocolate… that just happens to be vegan

Vegan Bark with GranolaFull disclosure:  I’m a meat-eater, and I’m a sucker for creamy confections.  I’m far from vegan, but I have many vegan friends.  If you’re anything like me, you’ve had that feeling of dread when you sit down to dinner with your vegan friends and dig into some sort of protein-based meat substitute and some gluten-free grain.  But that doesn’t mean vegans are devoid of taste buds, and not all hope is lost for vegan foodies.

The best chocolates are made of only a few simple ingredients:  cocoa, cocoa butter, and maybe a little sugar and vanilla.  When you see those labels listing a chocolate bar as “75% cocoa” or even most dark chocolate made by true chocolate artisans, you’re most likely eating something that, for all intents and purposes, qualifies as “vegan.”
