Paul Mosca never set out to change how chocolate was made. Just how his chocolate was made. “I needed to reach beyond the ordinary,” says Paul Mosca, the founder, owner and innovator of Elemental Chocolate, an emerging company in Raleigh, NC that specializes in dark chocolate covered whole cocoa beans. “Fine flavor chocolate fit my need to create a business that could reflect my personal values and delight people.”
Paul's passion led him to invent a method for removing the cocoa beans' shell while keeping it intact. “I have a sixth grade shop class and a liberal arts education.” Being told that shelling the bean and keeping it intact was impossible was no deterrence to Paul. “Shelling the cocoa bean has been a great creative endeavor,” says Paul.
